The ruby red, jewel-like, meat of the Atlantic Bluefin is highly prized and sought after in Japan due to its intricately marbled fat, yielding a buttery texture and balanced marine flavor. These sushi-grade, flash-frozen portions retain impeccable quality, flavor, and texture, as if fresh off the dock.
